Rye Bread - cooking recipe

1 c. milk (scalded)
1 Tbsp. salt
2 Tbsp. shortening
3 Tbsp. dark molasses
1 c. lukewarm water
4 c. flour (sifted)
1 1/2 c. rye flour (unsifted)
2 Tbsp. sugar
1 cake compressed yeast
Preparation

Combine scalded milk, salt, sugar, shortening and molasses. Cool to lukewarm.
Soften yeast in 1 cup of lukewarm water and add to milk mixture.
Blend in all flour and knead dough on floured board.
To obtain a fine grain, knead about 7 minutes.
Place dough in greased bowl and cover.
Let rise in a warm place for about 1 1/2 hours.
