Corn Chili - cooking recipe
Ingredients

2 Tbsp. vegetable oil
1 onion, minced
3 cloves garlic, minced
1 1/2 Tbsp. chili powder
1/8 to 1/4 tsp. cayenne pepper
2 tsp. ground cumin seed
1 large rib celery, chopped
2 peppers, diced
12 tomatoes, chopped and skinned
2 c. kidney beans
2 c. corn (off cob)

Preparation

In large heavy saucepan heat oil over moderate heat.
Add onion and garlic.
Stir to coat, then simmer until onion is softened. Add chili powder, cayenne and cumin.
Stir to blend.
Cook for at least 3 minutes, stirring frequently.
Add celery, peppers and tomatoes.
Simmer 5 minutes.
Add beans and corn.
Simmer 20 minutes.
Season with salt.
Serves 4.
