Scalloped Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    1/4 c. butter
    3/4 c. cracker crumbs
    1 tsp. chopped onion
    1 can mushroom soup
    2 beaten eggs
Preparation
    Peel and cube eggplant.
    Cook in boiling water until tender. Drain well.
    Stir in remaining ingredients.
    Bake in greased casserole dish at 350\u00b0
    for 30 minutes.
