Baked Fillet Of Sole Thermidor - cooking recipe

Ingredients
    2 lb. sole fillets
    5 Tbsp. butter or margarine
    salt and pepper
    1 1/4 c. milk
    3 Tbsp. flour
    1 c. sharp Cheddar cheese, grated
    paprika
    3 Tbsp. sherry
Preparation
    Preheat oven to 350\u00b0.
    Wash and dry fish.
    Melt 2 tablespoons butter and brush on dark side of fillets.
    Sprinkle with salt and pepper.
    Roll up filets with seasoning inside.
    Arrange in an 8 x 8-inch baking dish.
    Pour on 1/2 cup of the milk.
    Bake, uncovered, for 30 minutes.
