Apricot-Glazed Cornish Game Hens Stuffed With Wild Rice - cooking recipe

Ingredients
    1 (6 oz.) pkg. long grain and wild rice
    2 tsp. tarragon leaves
    salt and freshly ground pepper
    4 Cornish game hens
    1 (12 oz.) jar apricot preserves
    4 Tbsp. butter
    1/2 c. raisins
    1/3 c. orange flavored liqueur (such as Grand Marnier)
    parsley sprigs (for garnish)
Preparation
    Prepare rice according to package directions, omitting flavor packet.
    Add tarragon and raisins and season with salt and pepper to taste.
    Preheat oven to 350\u00b0.
    Wash hens inside and
    out; pat dry.
    Stuff hens loosely with cooked rice.
    Place hens, breast side up, in a large shallow baking pan.
    Season with salt and pepper.
