Baked Spicy Rice - cooking recipe
Ingredients

1 c. long grain rice (uncooked)
2 (10 oz.) cans diced tomatoes and green chilies (undrained)
1 c. water
1 tsp. salt
2/3 c. pimento stuffed olives, sliced
1/4 c. vegetable oil
1/2 c. chopped onion
1 c. (4 oz.) shredded Monterey Jack cheese
Preparation

Combine all ingredients in a shallow 2-quart baking dish. Bake, covered, at 350\u00b0 for 45 minutes. Stir well and bake, uncovered, 15 additional minutes or until liquid is absorbed and rice is tender. Yield: 6 to 8 servings.
