Mashed Potatoes With Browned Onions - cooking recipe

Ingredients
    3 lb. medium size all-purpose potatoes, peeled (about 9)
    2/3 c. margarine
    2 c. chopped onions
    1 tsp. salt
    1/2 tsp. pepper
    1/4 c. chopped fresh parsley
Preparation
    Cook potatoes until tender.
    Melt 3 tablespoons of margarine in a large skillet.
    Add onions and cook over medium-low heat for 8 to 10 minutes, stirring occasionally, until translucent. Increase heat to medium and cook 5 to 7 minutes longer, stirring occasionally, until golden.
    Drain potatoes, reserving 1 cup cooking water and return to pot.
    Add reserved cooking water, remaining margarine, the salt and pepper.
    Mash smooth with potato masher.
    Stir in onions and parsley.
