8 to 9 lb. roast
cracked lemon pepper
1 tsp. olive oil
Preparation

Rub the
roast all over with lemon pepper and olive oil and place
in
shallow\tpan.
Preheat
oven
to 500\u00b0.
Put the roast in\tthe
oven
and\tclose
the
door.
Do not open for 2 hours. The
roast should be cooked 5 minutes a pound for rare and 6 to 7 minutes a pound for less pink.
