Eggplant Pie - cooking recipe

Ingredients
    1 medium-large eggplant
    1/2 stick butter
    1/2 Cheddar cheese
    1 stick celery
    salt and pepper
    1 pkg. soda crackers
    1 egg
    1 medium onion
    1/4 c. milk
Preparation
    Peel eggplant, cut into cubes.
    Dice onion and celery.
    Cook until tender, drain and mash.
    Add other ingredients to mixture and mix well.
    Pour mixture into a greased glass pie plate or shallow baking dish.
    Bake at 350\u00b0 for 30 to 45 minutes.
