Chinese Chicken - cooking recipe

Ingredients
    2 lb. chicken breast, cooked and cut into 1-inch chunks
    1 medium onion, chopped
    oil
    4 c. chicken broth
    1 (1 lb.) bag frozen vegetables (mushrooms, broccoli and water chestnut combination)
    3 Tbsp. soy sauce
    4 c. Minute rice
Preparation
    In large pan, saute chicken and oil until chicken is lightly browned.
    Add broth, vegetables and soy sauce.
    Bring to a boil. Stir in rice.
    Cover.
    Remove from heat.
    Let stand 10 minutes. Fluff with a fork.
    Add soy sauce to individual servings.
