Sopa De Papas (Mexican Potato Soup) - cooking recipe

Ingredients
    3 large potatoes, diced
    1 large onion, chopped
    water
    1 tsp. salt
    2 slices bacon, fried, drained and crumbled (reserve drippings)
    1/2 tsp. pepper
    2 c. milk
    1 c. cream
    3 Tbsp. chopped parsley
    1/4 c. grated Cheddar cheese
Preparation
    Cook potatoes, onion, parsley, salt and pepper; drain.
    Add bacon and drippings, milk and cream.
    Heat to almost boiling.
    (May need to add a little water.)
    Sprinkle cheese over individual bowls of soup.
