Outrageous Blueberry Muffins - cooking recipe
Ingredients

2 1/4 c. cake flour
1 1/2 c. granulated sugar
3/4 c. solid shortening
3/4 c. milk
2 eggs (extra large)
2 1/2 tsp. double-acting baking powder
1 tsp. vanilla
1 tsp. salt
1/2 tsp. water
1 pt. (16 oz.) fresh blueberries (if using frozen, drain and dry)
Preparation

Preheat oven to 375\u00b0.
Place liners in muffin cups or grease and flour pan cups.
In large bowl, place flour, sugar, shortening, milk, eggs, baking powder, salt, vanilla and water. Blend at low speed for 2 minutes; scrape sides of bowl and mix at high speed for 6 minutes.
Spoon batter into muffin pan cups, filling each 1/2 full.
Add 6 to 10 blueberries to the batter in each cup, mixing in several and leaving some at top.
Bake at 350\u00b0 for approximately 25 minutes or until a toothpick inserted in the center comes out clean and dry.
Remove from oven and cool in pan for 10 minutes, then turn out and allow muffins to cool completely.
