Yellow Squasherole - cooking recipe

Ingredients
    2 Tbsp. butter
    1/4 c. Ritz cracker crumbs
    1/4 c. chopped pecans
    1/4 c. water
    1/2 tsp. salt
    1 lb. yellow squash, sliced
    1/4 c. mayonnaise
    1 egg, beaten
    1 c. shredded Cheddar cheese
    2 Tbsp. butter, melted
    1 1/2 tsp. sugar
    1 small onion, chopped
Preparation
    Microwave butter at High 1/2 to 1 minute; add cracker crumbs and pecans; microwave at High 2 minutes, stirring after 1 minute. Set aside.
    In 1-quart casserole, place water, salt and squash. Cover.
    Microwave at High, 8 to 10 minutes, stirring after 4 minutes until tender.
    Drain.
    Mix together mayonnaise, egg, cheese, melted butter, sugar and onion.
    Pour over squash, mixing well.
    Microwave at Medium 4 minutes.
    Stir, then add crumb topping.
    Microwave at Medium, 2 to 4 minutes more until center is set.
    Let stand about 5 minutes before serving.
    Makes about 4 servings.
