Port Royal Catfish Stew - cooking recipe

Ingredients
    2 lb. catfish, cooled and boned
    1 rib celery, diced
    1 large onion, diced
    2 large potatoes, diced
    1 pt. fresh tomatoes, diced
    2 pt. water from cooked fish
    1 tsp. hot sauce
    1 tsp. oregano
Preparation
    Cook fish; save water.
    Put celery, onion, potatoes and tomatoes in pan.
    Add 2 pints of water, salt and pepper to taste. When ingredients are almost cooked, add fish.
    (Makes about 2 quarts.)
