Baked Yam And Apple Casserole - cooking recipe
Ingredients

2 large yams or one small can yams
3 small apples (Granny Smith)
1/4 c. melted margarine
3 Tbsp. brown sugar
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Preparation

Scrub yams and prick with a fork.
Microwave on High until not quite tender, about 8 minutes.
(If using canned yams, do not microwave.)
Let cool, then peel and sliced 1/4 inch thick.
Peel and core apples and slice into 1/4-inch rings.
Spray shallow casserole with vegetable spray.
In layers, alternately place yams, apples, margarine, brown sugar and seasonings.
Cover and bake at 375\u00b0 for 20 to 25 minutes.
Uncover, baste with juices and cook about 5 to 10 minutes more, until yams and apples are tender and lightly browned.
