Ingredients

1 1/2 c. fresh bread crumbs
1 c. fresh parsley, chopped
1/2 c. olive oil
2 Tbsp. dijon mustard
2 tsp. thyme
Salt and pepper to taste
8 pork chops, 1 1/2 inches thick
Preparation

Preheat oven to broil. Mix first 5 ingredients together in a medium bowl. Season to taste with salt and pepper. Pat a portion of this crumb mixture onto both sides of each chop (can be prepared to this point several hours in advance, but keep refrigerated). Place chops onto a broiler pan, 4 inches from heat source. Broil, turning once with spatula, until golden brown (3 minutes per side). Adjust oven to 350\u00b0. Bake chops 15 to 20 minutes. Serve Immediately.
