Roasted Italian Potato Fans - cooking recipe
Ingredients

medium potatoes (1 per person)
Italian salad dressing
sliced onions
Parmesan cheese
melted butter
basil, chopped
Preparation

You may peel potatoes or leave skins on and wash well.
Slice each potato crosswise into 1/4-inch slices, being careful to cut each slice only 3/4 of the way through the potato.
Place potatoes in a baking dish and brush with melted butter.
Place 1 onion ring between each potato slice.
Pour Italian dressing over potatoes and sprinkle with salt, basil and Parmesan cheese.
Cook at 400\u00b0 for about 1 hour until potatoes are tender.
Brush potatoes during cooking with dressing from bottom of pan.
For lighter dish, skip butter and use nonfat dressing.
This recipe works well in the microwave.
