Eggplant Parmesan - cooking recipe
Ingredients

1 large eggplant
1 pkg. Mozzarella cheese
1 c. Parmesan cheese
1 can tomato sauce
Italian seasoning
Preparation

Skin eggplant (tricky).
Slice in long 1/2-inch pieces lengthwise.
Soak in salt water for 30 minutes.
While soaking, simmer tomato sauce with Italian seasoning.
In shallow baking dish, layer eggplant, tomato sauce, Parmesan cheese and sliced Mozzarella cheese.
Repeat.
Bake at 350\u00b0 for 30 minutes to 1 hour. Cut in squares and serve plain or over bed of linguini.
