Cherry And Whipped Cream Salad - cooking recipe

Ingredients
    2 packets Knox unflavored gelatine
    1/2 c. cold water
    20 oz. can crushed pineapple, drained
    3/4 c. sugar
    1/4 tsp. salt
    2 Tbsp. ReaLemon juice
    1 tsp. vanilla
    1/2 c. maraschino cherries, cut up
    1 c. (1/2 pt.) whipping cream, whipped
Preparation
    Soften gelatine in cold water.
    Drain pineapple (set aside). Add enough water to pineapple juice to make 1 1/2 cups.
    Heat this (pineapple juice and water) almost to boil; add gradually to gelatine.
    Stir until dissolved.
    Stir in sugar, lemon juice, salt and vanilla.
    Pour into mixing bowl.
    Chill until slightly thick. Beat with mixer until light and fluffy.
    Fold in drained pineapple, cherries and whipped whipping cream.
    Refrigerate.
    Best when made day prior to serving.
    (Pretty for Christmas using mixture of red and green maraschino cherries).
    Use cherry slices on top.
