Zucchini Cake - cooking recipe
Ingredients

2 c. grated, peeled zucchini
3 eggs
1 c. oil
2 c. sugar
2 c. flour
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla
1 c. chopped nuts
Preparation

Mix oil and sugar together.
Add eggs, one at a time. Beat well after each addition.
Add vanilla.
Add sifted dry ingredients, alternating with zucchini.
Fold nuts into batter. Batter will be thin.
Pour into greased and floured 13 x 9-inch pan.
Bake at 350\u00b0 for 35 minutes.
Cool and frost with Cream Cheese Icing.
