Fresh Tomato Relish - cooking recipe

Ingredients
    3 c. diced tomatoes
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    3 Tbsp. olive oil
    3 Tbsp. vinegar
    1 tsp. sugar
    salt
    freshly ground black pepper
Preparation
    Combine ingredients and let stand at room temperature for 1 hour. Chill for at least 3 hours. Makes 4 cups.
