Cheesy Potato Casserole - cooking recipe

Ingredients
    7 medium potatoes
    1/4 c. butter or margarine, melted
    1 small onion
    1 tsp. salt
    1/4 tsp. pepper
    1 (8 oz.) container sour cream
    1 can cream of chicken soup
    2 c. shredded Cheddar cheese
    3 Tbsp. butter or margarine, melted
    1 1/2 c. herb seasoned stuffing
Preparation
    Cook potatoes in boiling water 30 minutes or until tender. Cool, peel and cut into 1/4 to 1/2-inch strips; set aside.
    Combine 1/4 cup butter and next 5 ingredients in large bowl.
    Add potatoes and cheese.
    Place in a 13 x 9 x 2-inch pan.
    Combine 3 tablespoons butter and stuffing mix; sprinkle over potato mixture.
