Vegetable Bake - cooking recipe
Ingredients

1 medium eggplant, sliced
1/4 c. olive oil
3 medium zucchini, sliced
1 c. sliced mushrooms
1/2 c. sliced green onion
1/2 c. green pepper strips
1 medium garlic clove, minced
1 c. halved cherry tomatoes
1 tsp. salt
1/8 tsp. pepper
2 c. shredded cheese
Preparation

Saute eggplant in oil in skillet. Brown lightly on both sides. Set aside. Saute zucchini, mushrooms, green pepper, green onion and garlic several minutes. Add tomatoes, salt and pepper. Alternate layers of vegetables and cheese in shallow buttered baking dish. End with cheese. Microwave for 12 minutes or bake at 350\u00b0 for 30 minutes.
