Gourmet Potatoes - cooking recipe

Ingredients
    6 Maine potatoes
    2 c. shredded Cheddar
    1/4 c. margarine
    1 1/2 c. sour cream
    1/3 c. chopped onion
    1 tsp. salt
    1/8 tsp. pepper
    2 Tbsp. margarine
Preparation
    Cook potatoes in skins.
    Cool, peel and shred coarsely.
    In saucepan, over low heat, combine cheese and 1/4 cup margarine, stirring constantly, until almost melted.
    Remove from heat. Blend in sour cream, onions, salt and pepper.
    Fold in potatoes and place in 2-quart casserole.
    Dot with remaining margarine. Can be refrigerated overnight or bake at 350\u00b0 for 25 minutes.
