Amaretti(Almond Macaroons) - cooking recipe

Ingredients
    1/2 c. sugar
    1/4 c. unsifted flour
    1 (8 oz.) can almond paste
    2 egg whites, slightly beaten
    pignoli (optional)
    1/2 c. confectioners sugar
    1/8 tsp. salt
Preparation
    Sift sugars with flour and salt; set aside.
    In medium bowl, break up almond paste with wooden spoon.
    Add egg whites and beat until well blended and fairly smooth.
    Stir in flour mixture until well blended.
    Drop by slightly rounded teaspoonfuls 2-inches apart on cookie sheet that is lined with aluminum foil and greased. Lightly shape into rounds.
    Press pignoli nuts into each.
    Bake 20 to 25 minutes until golden.
    Let cool slightly, carefully remove to rack.
