Cucumber Salad - cooking recipe

Ingredients
    2 cucumbers
    salt
    1/4 c. white vinegar
    2 tsp. sugar
    1 small purple onion, thinly sliced
    dill to taste (fresh or dried)
    2 Tbsp. light sour cream (optional)
Preparation
    Peel and seed cucumbers and slice thinly (food processor works fine).
    Place in colander and salt heavily.
    Place plate with weight on top to press out moisture.
    Allow to stand for several hours.
    Rinse thoroughly and return to colander to drain, replacing plate and weight.
    When as dry as possible, add remaining ingredients except for dill; chill thoroughly.
    Add dill to taste just before serving.
    Yield:
    4 servings.
