Glazed Carrot Coins - cooking recipe

Ingredients
    6 large carrots
    1/3 c. apple juice
    3 Tbsp. butter
    2 tsp. brown sugar
    1/4 tsp. salt
    1 Tbsp. parsley
Preparation
    In a food processor, with the slicing blade, cut the carrots into thin slices.
    In a medium sauce pan, bring the apple juice, butter and brown sugar to a boil over medium-high heat.
    Stir in the salt.
    Add the carrots, reduce the heat to medium.
    Cover and simmer, stirring often until tender, 5 to 8 minutes.
    Cook the carrots uncovered for the last minute or so to reduce the cooking liquid to a glaze.
    Toss the carrots with the parsley.
    Serve.
