Baked Catfish - cooking recipe

Ingredients
    1/4 c. yellow cornmeal
    1/2 tsp. salt
    1/2 tsp. black pepper
    1/4 c. all-purpose flour
    1 tsp. paprika
    1 egg white
    4 (4 oz.) catfish fillets
    2 Tbsp. skim milk
    1/4 c. grated Parmesan cheese
Preparation
    Combine cornmeal, flour, Parmesan cheese, paprika, salt and black pepper.
    Set aside.
    Whisk together egg white and milk.
    Dip fillets in milk mixture and dredge in cornmeal mixture.
    Place on a foil-lined baking sheet coated with cooking spray.
    Coat each fillet lightly with cooking spray.
    Bake at 350\u00b0 for 30 minutes or until fish flakes easily when tested with a fork.
    Yield:
    4 servings.
