Eggplant Parmesan - cooking recipe
Ingredients

1 large eggplant, sliced into medium pieces
4 c. tomato-vegetable spaghetti sauce
2 oz. reduced fat Mozzarella cheese
2 Tbsp. grated Parmesan cheese
nonstick cooking spray
Preparation

Coat a pan with nonstick cooking spray.
Spread unpeeled eggplant in pan.
Lightly spray top of eggplant.
Broil until brown.
Preheat oven to 350\u00b0. In baking dish, layer tomato-vegetable sauce, eggplant, Mozzarella, sauce, eggplant, Mozzarella and sauce.
Sprinkle with grated Parmesan.
Bake covered for 30 to 40 minutes.
