Onion Soup Au Gratin - cooking recipe

Ingredients
    1/2 stick butter (4 Tbsp.)
    4 to 6 large onions, halved and thinly sliced
    1 to 2 Tbsp. sugar
    1/2 tsp. coarsely ground pepper
    6 c. beef stock or canned beef broth
    2 Tbsp. to 1/4 c. red wine
    4 large slices French bread, toasted
    1 c. grated Gruyere cheese
Preparation
    Melt butter in a large soup pot.
    Add onions and wilt over medium-low heat, covered, 10 minutes.
    Stir occasionally. Sprinkle sugar over onions; toss.
    Cook, uncovered, until caramelized, 10 minutes.
    Salt and pepper.
    Add 3 cups of stock; simmer, uncovered, over medium heat for 15 minutes.
    Add remaining 3 cups of stock and wine.
    Cook until rich in taste, about 30 to 40 minutes.
