Zucchini-Rice Bake(Fat-Free) - cooking recipe

Ingredients
    1 c. brown rice (uncooked)
    3 medium zucchini, sliced thin
    1 (7 1/2 oz.) can chopped green chilies (mild)
    1 c. fat-free Cheddar or Jack cheese, grated
    1 tomato, sliced thin
    2 c. fat-free sour cream
    1 tsp. each: oregano, garlic powder and salt
    3 Tbsp. chopped green onion
Preparation
    Cook rice according to package.
    Steam zucchini until crisp-tender.
    Mix all ingredients together except tomato.
    Place in a 3-quart casserole and add tomato slices to top; sprinkle with fresh parsley if desired.
    Cover to bake; remove cover for last 10 minutes in oven.
    Bake 45 minutes at 350\u00b0.
    Serves 8.
