Cajun Special - cooking recipe

1 chicken
2 Polish sausages
1 green pepper, chopped
1 onion, chopped
2 cans chicken broth
2 to 3 fresh tomatoes
Rice (optional)
Flour
Black pepper
Red (Cayenne) pepper
Garlic
Salt
Preparation

Remove skin and fat from chicken.
Combine flour, black pepper, red pepper, garlic and salt.
The flour should look fairly red.
Roll chicken in flour and fry in oil and butter.
When cooked, remove chicken and debone.
Remove all but 2 to 3 tablespoons of the remaining oil.
Leave all the blackened flour and chicken in the pan.
Saute onion and green pepper in pan until onions are clear.
Combine shredded chicken, vegetables, rice, chicken broth and sliced sausage into a kettle and simmer.
Adjust the flavor with cayenne pepper and black pepper.
Ten minutes before you serve, add the tomato wedges.
