Cheesy Potato Skins - cooking recipe

Ingredients
    6 extra large Russet potatoes
    1/3 to 1/2 c. butter, melted
    1 c. freshly grated Parmesan cheese
    8 strips bacon, fried crisp and crumbled
    fresh ground pepper
    salt to taste
    2 Tbsp. garlic chives
    sour cream and horseradish, mixed to taste
Preparation
    Bake potatoes.
    Cut each piece into 4 pieces lengthwise. Scrape away pulp carefully, leaving thin layer on skins.
    Reserve pulp for other use.
    Place potato skins in shallow dish.
    Drizzle with butter and sprinkle evenly with cheese, bacon, salt and pepper.
    Bake 15 minutes until cheese is melted and golden. Combine garlic chives, sour cream and horseradish.
    Serve in a bowl to dip potatoes in.
