Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red beans
    1 ham bone
    1 large onion
    1 c. chopped green onions (tops and bottoms)
    1/4 c. chopped green pepper
    1/4 c. chopped parsley
    1/4 c. butter
    2 bay leaves
    salt
    cayenne pepper
    1/2 lb. ham or sausage
    hot cooked rice
Preparation
    Wash and sort
    beans;
    cover beans with water and bring to a boil.
    Let beans boil several minutes.
    Remove from heat; cover. Let soak overnight.
    Heat bean mixture to boiling; add remaining ingredients, except
    ham and rice.\tCover and simmer 2 hours or until
    beans
    are
    tender.\tAdd
    more
    water during cooking if necessary.
