Fresh Cauliflower Soup - cooking recipe
Ingredients

1 small head cauliflower
1 small onion, thinly sliced
2 c. chicken broth
1/4 tsp. thyme
2 Tbsp. margarine
1 Tbsp. flour
1 tsp. salt
dash of pepper
2 c. half and half
1/2 c. shredded cheese
Preparation

Core cauliflower, remove leaves and separate into small pieces.
Combine cauliflower pieces, onion and chicken broth in a saucepan and bring to a boil.
Reduce heat and simmer until cauliflower is tender, approximately 10 minutes.
Remove and reserve about 1/3 of the cauliflower.
Transfer remaining mixture to a food processor or blender and puree until smooth.
