Risotto Di Scampi (Shrimp Risotto) - cooking recipe

Ingredients
    6 Tbsp. butter
    3 Tbsp. olive oil
    1 clove garlic, minced
    1 1/2 c. long grain rice
    3/4 c. dry white wine
    1 lb. cooked shrimp
    1 1/2 tsp. salt
    3/4 tsp. white pepper
    3/4 tsp. marjoram
    3 Tbsp. grated Parmesan cheese
    3 1/3 c. hot chicken broth
Preparation
    Heat 4 tablespoons of butter and the oil in a heavy skillet or casserole.
    Stir in the garlic and rice until golden.
    Add wine; cook over low heat.
    Add half of broth and cook 15 minutes.
    Add shrimp, salt, pepper, marjoram and remaining broth.
    Stir lightly with a fork.
    Re-cover and cook 10 minutes over low heat or until rice is tender and dry.
    Stir in cheese and remaining butter. Serves 4 to 6.
