New England Pot Roast - cooking recipe

Ingredients
    1/4 c. flour
    1 Tbsp. plus 2 tsp. salt
    1 1/4 tsp. pepper
    4 lb. beef chuck pot roast
    2 Tbsp. shortening
    1 (5 oz.) jar horseradish
    1 c. water
    8 small potatoes
    8 medium carrots
    1/2 to 3/4 large onion, cut up
    1/2 tsp. salt
Preparation
    Stir together flour, 1 tablespoon plus 2 teaspoons salt and pepper; rub mixture on meat.
    Melt shortening in large electric skillet or Dutch oven.
    Brown meat over medium heat, about 15 minutes.
    Reduce heat; spread horseradish on both sides of meat. Add 1 cup water, cover tightly and simmer in electric pan or on top of range for 4 hours or until tender.
