Hot Spinach Salad - cooking recipe

Ingredients
    10 oz. pkg. fresh spinach, torn (9 c.)
    4 slices bacon, diced (1/2 lb.)
    1/4 c. light cream
    2 beaten eggs
    3 Tbsp. vinegar
    2 tsp. sugar
    1/4 tsp. salt
    1/4 tsp. paprika
    dash of pepper
    hard-cooked egg (wedges optional)
Preparation
    Place spinach in salad bowl.
    In a 10-inch skillet, cook bacon over medium heat until crisp; spoon bacon and drippings over spinach.
    Combine light cream, eggs, vinegar, sugar, salt, paprika and pepper.
    Pour into skillet; cook and stir over medium heat until thickened.
    Pour over spinach; toss until leaves are well coated.
    Garnish with egg wedges, if desired.
    Serve at room temperature, warm.
