Italian Potato Salad - cooking recipe

Ingredients
    4 medium size potatoes
    1 small red onion, sliced
    2 cloves garlic, minced
    1/4 c. chopped parsley
    1/4 c. olive oil
    salt and pepper to taste
    red pepper flakes (optional)
Preparation
    Boil potatoes with skin on until cooked.
    Place in cold water. Remove skins.
    When cool enough, slice into 1/4-inch thickness and place in serving dish.
    Add all ingredients and mix.
    Serves 6.
