Zucchini Casserole - cooking recipe
Ingredients

1 stick margarine
1 carrot, shredded
1 small onion
1 large zucchini
2 c. cream of mushroom soup
1 box croutons (Pepperidge Farm cheese and garlic)
1 c. sour cream
Preparation

Use a large, deep dish or bowl.
Saute carrot and onion in margarine (Corning Ware is best).
Leave skin on zucchini.
Remove seeds and cut in cubes.
Add to carrot mixture and cook until tender.
Add croutons, soup and sour cream.
Bake at 350\u00b0 for 30 to 40 minutes.
