Diabetic Banana Muffins - cooking recipe

Ingredients
    2 c. sifted flour
    2 tsp. baking powder (omit if using self-rising flour)
    1 tsp. salt (omit if using self-rising flour)
    1/2 tsp. soda
    1/2 tsp. nutmeg
    1 egg, slightly beaten
    1 c. mashed ripe bananas
    1/2 c. skim milk
    1/3 c. cooking oil
    2 tsp. Sweet-10
Preparation
    Grease and flour or line with paper baking cups 12 muffin cups. Sift flour with baking powder, salt, soda and nutmeg into mixing bowl.
    Combine remaining ingredients.
    Mix with dry ingredients only until dry particles are moistened.
    Fill muffin cups 2/3 full. Bake at 375\u00b0 for 20 to 25 minutes, or until golden brown.
    Yields 12 muffins.
    Each equals 1 1/2 bread plus 1 fat exchange.
