Dolmas (Greek Appetizer) - cooking recipe

Ingredients
    1/2 c. pine nuts
    1 c. long grain white rice
    1 c. plus 3 Tbsp. olive oil
    1 c. finely chopped yellow onion
    3 finely chopped green onions with tops
    1/4 c. minced, fresh parsley
    2 Tbsp. minced, fresh mint
    1 tsp. ground cinnamon
    1/2 tsp. ground allspice
    1/2 tsp. salt
    1/4 tsp. fresh black pepper
    16 oz. brine packed grape leaves
    3/4 c. fresh lemon juice
    1 c. heated vegetable stock
    fresh parsley
Preparation
    Toast pine nuts in a heavy skillet over medium heat, stirring frequently, for about 5 minutes until golden.
    Cool.
    Wash rice in cold water and drain.
    Heat 3 tablespoons of olive oil in a saute pan over medium-high heat.
    Add yellow onion and saute until just soft.
    Transfer to a large bowl.
    Add rice, 1/2 cup of olive oil, green onions, 1/4 cup parsley, mint, pine nuts, cinnamon, allspice, salt and pepper.
