Chicken And Rice Pilaf * - cooking recipe

Ingredients
    1 1/3 c. Minute rice
    1/2 envelope dry onion soup mix
    1 can mushroom soup
    1 pkg. frozen chicken breasts or whole chicken (good pieces)
    1 1/4 c. boiling water
    1/4 c. dry sherry (optional)
    1 Tbsp. pimento
    melted butter
    salt and pepper
    paprika
Preparation
    In a 3/4-quart casserole dish, combine all ingredients, except chicken, butter and seasoning.
    In a frying pan, melt butter, add seasonings and chicken.
    Brown chicken a little.
    Place on top of rice mixture in casserole dish.
    Cover.
    Bake in moderate oven (375\u00b0) for 1 hour and 15 minutes.
    Makes 4 to 5 servings.
