Welsh Rarebit - cooking recipe

Ingredients
    1 lb. extra sharp Cheddar cheese
    3 Tbsp. Worcestershire sauce
    1 tsp. dry mustard
    red pepper
    2 eggs
    2 Tbsp. cornstarch
    1 (12 oz.) can very dark beer
Preparation
    Melt cheese in top of double boiler. Make a thickening of cornstarch in a small amount of water. Beat eggs with Worcestershire. Add cornstarch, eggs, beer and mustard to melted cheese. Beat with rotary beater or electric mixer frequently until smooth and thickened. Add red pepper to taste. Serve over saltine crackers. Top with chopped onions which have marinated in cider vinegar, if desired.
