Minestrone Soup - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large onion, diced
    1 garlic clove, minced
    3 qt. beef stock
    3 carrots, diced
    2 small potatoes, diced
    1 (19 oz.) can kidney beans with liquid
    1 (16 oz.) can tomato paste
    4 c. shredded cabbage
    1 tsp. oregano
    1/2 tsp. thyme
    2/3 c. macaroni or pasta
    1 bay leaf
    1/2 lb. zucchini, sliced
    2/3 c. peas
    1/2 c. fresh parsley, minced
Preparation
    Saute onion and garlic in oil.
    Add the beef stock, carrots, potatoes, kidney beans, tomato paste, cabbage, oregano and thyme. Simmer, covered, for 2 hours.
    Add rest of ingredients; simmer 20 minutes more.
    Yields 11 to 11 1/2 (1-cup) servings.
