Simon And Garfunkel Chicken - cooking recipe
Ingredients

3 chicken breasts, boned and skinned
1 stick butter (8 Tbsp.)
salt and pepper
6 slices Mozzarella cheese
flour
1 beaten egg
bread crumbs, toasted
2 Tbsp. chopped parsley
1/2 tsp. each: sage, rosemary and thyme
1/2 c. dry white wine
Preparation

Pound chicken; spread with 1/2 stick butter.
Season with salt and pepper.
Put slice of cheese on each piece of chicken.
Roll and tuck all ends.
Coat lightly with flour.
Dip in egg, then roll in bread crumbs.
Place in baking dish.
Melt remaining butter and pour over chicken.
Bake at 350\u00b0 for 30 minutes, basting.
Add wine (Sauterne) and bake 20 minutes more.
