Ratatouille * - cooking recipe
Ingredients

1 small eggplant
2 small zucchini
1 large onion
1 green pepper
2 cloves garlic
1 large can crushed tomatoes in puree
salt and pepper to taste
Preparation

Dice eggplant, zucchini, onion and green pepper.
Combine with rest of ingredients in large pan and bring to a boil (covered). Then uncover and let simmer on very low flame for approximately 3 hours, adding salt and pepper to taste.
Serves 4.
