Boysenberry Muffins - cooking recipe

2 1/2 c. flour
1 Tbsp. baking powder
3/4 c. sugar
1 egg
1 1/3 c. milk
6 Tbsp. vegetable oil
1 tsp. vanilla extract
1 c. boysenberries
3 Tbsp. brown sugar
Preparation

Preheat oven to 400\u00b0.
Grease 12 muffin pans.
Into a medium bowl, sift flour and baking powder.
Stir in sugar.
In another bowl, beat together egg, milk, oil and vanilla.
Add to dry ingredients all at once.
Stir just until blended.
Gently stir in boysenberries.
Spoon batter into prepared muffin pans.
Sprinkle with brown sugar.
Bake for 15 to 20 minutes, until well risen and golden brown.
