Mini Pecan Muffins - cooking recipe

Ingredients
    1 c. packed brown sugar
    1/2 c. all-purpose flour
    1 c. chopped pecans
    2/3 c. melted butter (no substitutes)
    2 eggs, beaten
Preparation
    Set oven to 350\u00b0. Combine brown sugar, flour and pecans. Set aside. Combine butter and eggs; mix well. Stir into flour mixture just until moistened. Fill greased or paper-lined miniature muffin cups 2/3 full. Bake at 350\u00b0 for 10 to 20 minutes or until muffins test done. (Mine get done in about 11 to 12 minutes; ovens vary.) Do not overcook. Remove to wire rack to cool. Yields approximately 2 1/2 dozen.
