Broccoli-Rice Quiche(Makes 3 Servings) - cooking recipe

Ingredients
    1 1/2 c. cooked enriched rice
    3 eggs
    3 oz. shredded sharp Cheddar cheese, divided
    1 c. cooked and well drained frozen chopped broccoli
    1/2 c. drained canned sliced mushrooms
    3 Tbsp. chopped onion
    3 Tbsp. skim milk
    2 Tbsp. grated Parmesan cheese
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Preheat oven to 350\u00b0. In a medium bowl, combine rice with 1 egg and 1 ounce Cheddar cheese. Press mixture firmly over bottom and sides of an 8-inch pie pan to form a crust; set aside.
